- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 0.75 cups freshly grated Parmesan cheese
- 4 large garlic cloves, minced
- 2 tbsp extra virgin olive oil
- 1 tsp dried Italian seasoning
- 0.5 tsp salt
- 0.5 tsp black pepper
- 8–10 wooden or metal skewers
Instructions
- Pat chicken thighs dry with paper towels and cut into uniform 1-inch cubes.
- In a medium bowl, toss chicken with olive oil, grated parmesan, minced garlic, Italian seasoning, salt, and pepper until evenly coated.
- If using wooden skewers, soak them in water for 30 minutes. Thread chicken onto skewers, leaving small spaces between cubes.
- Preheat air fryer to 390°F (200°C) for 3 minutes.
- Place skewers in the air fryer basket without overlapping. Cook for 12-15 minutes, flipping halfway through at the 6-minute mark.
- Cook until cheese is golden brown and chicken reaches an internal temperature of 165°F (74°C).
- Remove skewers and let rest for 2-3 minutes before serving.
Notes
Use freshly grated Parmesan instead of pre-grated to ensure proper melting and crisping. Do not overcrowd the air fryer basket to allow for proper air circulation. If using wooden skewers, soaking them prevents burning. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the air fryer.
