Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8 inch baking dish, optionally lining it with parchment paper.
- In a large bowl, mash the ripe bananas with a fork until smooth.
- Add melted butter, maple syrup, milk, eggs, and vanilla extract to the bananas and whisk until well combined.
- Stir in the oats, cinnamon, baking powder, and salt until the oats are evenly coated.
- Fold in optional add-ins like walnuts, chocolate chips, or blueberries.
- Pour the mixture into the prepared baking dish and smooth the top.
- Bake for 30-35 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes before slicing and serving.
Notes
Use very ripe bananas for maximum sweetness. Do not skip the salt as it enhances flavor. Let the oatmeal cool for 10 minutes to allow it to set. Can be stored in the fridge for up to 5 days or frozen for up to 3 months.
