Instructions

  1. Melt butter in a heavy-bottomed skillet over medium heat, stirring constantly until it foams, turns deep amber, and smells nutty (5-7 minutes). Pour into a heat-proof bowl and cool until lukewarm.
  2. In a large mixing bowl, whisk the cooled brown butter, granulated sugar, and brown sugar vigorously for 2 minutes until glossy and slightly lighter.
  3. Add the eggs, egg yolk, and vanilla extract. Whisk until the mixture is smooth and uniform.
  4. Add the flour, baking soda, and kosher salt. Gently fold with a spatula until just combined; do not overmix.
  5. Fold in the chocolate chunks, reserving a handful for topping.
