  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 cup unsalted butter, melted
  • 1/4 cup bourbon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. Drain the canned peaches, reserving the syrup. Pour peaches into the prepared dish and top with the reserved syrup.
  3. In a large bowl, whisk together flour, sugar, baking powder, and a pinch of salt.
  4. In a separate small bowl, mix the melted butter and bourbon.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
  6. Spoon the topping evenly over the peaches.
  7. Bake for 40-45 minutes until the topping is golden brown and the sauce is bubbling around the edges.

Notes

The alcohol in the bourbon mostly evaporates during baking, leaving behind flavor. For a non-alcoholic version, substitute with apple cider or water with vanilla extract. This cobbler can be made ahead and reheated. For extra caramelization, add a tablespoon of brown sugar to the peach layer.
