Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, beat the room-temperature butter, brown sugar, and granulated sugar with an electric mixer on medium speed for 2-3 minutes until light and fluffy.
- Add eggs one at a time, beating well after each addition. Scrape down the sides of the bowl. Add vanilla extract and mix until combined.
- Gradually add the dry ingredient mixture to the wet mixture on low speed, mixing just until the flour disappears. Do not overmix.
- Stir in the rolled oats and raisins (and nuts if using) using a wooden spoon or mixer on lowest setting until the dough is thick.
- Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes (or up to 24 hours).
- Scoop tablespoon-sized balls of dough onto prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes until edges are lightly golden but centers still look soft and slightly underbaked.
- Let cookies cool on the baking sheet for 5 minutes to set, then transfer to a wire rack to cool completely.
