Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium-high speed until light and fluffy (about 3-4 minutes).
  3. Reduce mixer speed to medium. Add eggs one at a time, beating well after each addition. Scrape down the sides of the bowl. Add vanilla extract and mix until combined.
  4. In a separate bowl, whisk together the flour, baking soda, kosher salt, cinnamon, nutmeg, and ginger.
  5. With the mixer on low speed, gradually add the dry ingredients to the wet ingredients. Mix until just combined; do not overmix.
