Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 baking dish.
  2. In a large bowl, whisk together rolled oats, brown sugar, baking powder, salt, and 2 teaspoons of cinnamon.
  3. In a separate bowl, whisk eggs, milk, and 1 teaspoon vanilla extract until smooth.
  4. Pour wet mixture over dry ingredients and stir to combine. Let sit for 5 minutes to allow oats to absorb liquid.
  5. In a small bowl, mix softened butter, 1 teaspoon cinnamon, and 2 tablespoons brown sugar to create a swirl mixture.

  7. Gently swirl the batter with a knife or chopstick to create ribbons.

Notes
