A comforting, restaurant-quality Salisbury steak recipe featuring tender beef patties simmered in a rich, savory mushroom gravy made with fresh and dried porcini mushrooms.

- 1.5 lbs (680g) 80/20 ground beef
- 1/2 cup (45g) breadcrumbs
- 1/4 cup (30g) finely diced onion
- 1 minced garlic clove (for meat)
- 1 tbsp (15ml) Worcestershire sauce
- 1 tsp (5ml) Dijon mustard
- 1 egg
- 1 tsp (5g) salt
- 1/2 tsp (2g) black pepper
- 2 tbsp (16g) all-purpose flour (for coating)
- 2 tbsp (30g) butter (divided)
- 8 oz (225g) cremini mushrooms, sliced
- 1/2 cup (75g) diced onion
- 2 minced garlic cloves
- 2 cups (480ml) low-sodium beef broth
- 1/4 cup (60ml) reserved porcini mushroom soaking liquid (strained)
- 1 tbsp (8g) flour (for gravy)
- 1 tsp (1g) dried thyme
Instructions
- In a large bowl, combine ground beef, breadcrumbs, diced onion, minced garlic, Worcestershire sauce, Dijon mustard, egg, salt, and pepper. Mix gently with hands until just combined; do not overmix.
- Form the mixture into 6 oval patties, about 1/2 inch thick. Dust each patty lightly with flour.
- Heat 1 tbsp butter in a 12-inch skillet over medium-high heat. Sear patties for 2-3 minutes per side until browned. Remove to a plate; do not cook through.
- Reduce heat to medium. Add remaining 1 tbsp butter to the skillet. Add sliced cremini mushrooms and diced onion; cook for 5-7 minutes until browned and soft.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in beef broth and reserved porcini soaking liquid. Scrape up browned bits from the pan. Whisk in 1 tbsp flour to thicken and simmer for 2 minutes.
- Return seared patties to the skillet, nestling them into the gravy. Sprinkle with dried thyme.
- Cover and simmer on low for 10-12 minutes until internal temperature reaches 160°F (71°C).
- Uncover and simmer for 2-3 more minutes if thicker gravy is desired. Adjust seasoning and serve.
Notes
Use cold ground beef for easier handling. Strain porcini soaking liquid to remove grit. Let steaks rest for 5 minutes before serving to redistribute juices. For gluten-free, use GF breadcrumbs and flour blend. For vegan, substitute beef with plant-based alternative and use vegetable broth.
