- 1/4 cup all-purpose flour (for roux)
- 4 cups low-sodium chicken broth
- 1/2 cup heavy cream
- 3 cups shredded rotisserie chicken meat
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 cup frozen peas
- 2 cups all-purpose flour (for dumplings)
- 1 tbsp baking powder
- 3/4 cup whole milk
- 1 tsp fresh thyme, chopped
- 1 tsp fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Dice carrots and celery into 1/4 inch cubes. Shred rotisserie chicken and set aside.
- Heat a large Dutch oven or heavy-bottomed pot over medium heat. Melt butter, then whisk in 1/4 cup flour to create a roux. Cook for 2 minutes until nutty but not brown.
- Slowly whisk in chicken broth to prevent lumps. Add diced carrots and celery, heavy cream, salt, and pepper. Bring to a gentle boil, then reduce heat to low and simmer for 5 minutes.
- In a medium bowl, whisk together 2 cups flour and baking powder. Make a well and pour in milk and chopped herbs. Stir with a fork until a shaggy dough forms; do not overmix.
- Turn dough onto a floured surface, pat into a 1/2 inch thick rectangle, and cut into 1-inch squares.
- Add shredded chicken to the simmering broth. Gently drop dumplings into the pot. Let sit undisturbed for 5 minutes to set.
- Gently stir dumplings into the broth, cover, and simmer for 10 minutes until fluffy.
- Add frozen peas in the last 2 minutes to warm through. Serve hot.
Notes
Do not overmix the dumpling dough to avoid tough texture. Ensure baking powder is fresh for fluffy dumplings. Keep the simmer gentle to prevent dumplings from breaking apart. If the broth becomes too thick, add a splash of extra hot broth. Dumplings do not freeze well; freeze broth and chicken separately if needed.
