  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract
  • Pinch of salt
  • 4 medium ripe bananas, sliced
  • 2 cups heavy cream (for whipped cream topping)
  • Powdered sugar (for whipped cream)
  • Chocolate (optional, for grating)

Instructions

  1. Preheat oven to 350°F (175°C). Crush shortbread cookies into fine crumbs using a food processor or rolling pin.
  2. Mix cookie crumbs with melted butter and 2 tablespoons sugar. Press firmly into the bottom and sides of a 9-inch pie dish.
  3. Bake crust for 8-10 minutes until fragrant. Let cool completely.
  4. In a medium saucepan, whisk together milk, heavy cream, 1/2 cup sugar, cornstarch, and salt until smooth.
  5. Cook over medium heat, whisking constantly, until the mixture thickens and bubbles.
  6. Continue whisking for 2 minutes after bubbling to cook out the cornstarch taste. The custard should coat the back of a spoon.
  7. Remove from heat and stir in 2 tablespoons butter and vanilla extract.
  8. Pour custard into a bowl, cover with plastic wrap directly on the surface, and refrigerate for at least 1 hour until cold.
  9. Spread the cold custard into the cooled crust.
  10. Arrange sliced bananas on top of the custard.
  11. Top with whipped cream and optionally grate chocolate over the top.
  12. Refrigerate for at least 2 hours before serving to allow flavors to meld and custard to set.

Notes

Ensure the crust and custard are completely cool before assembling to prevent a soggy crust. Use ripe bananas with brown spots for best flavor. If making ahead, assemble in the morning and refrigerate until serving. Do not freeze this pie as the custard will separate and bananas will become mushy.
