Ingredients
- 8 oz (225g) full-fat block cream cheese, softened
- 1 cup (240ml) full-fat creamy ranch dressing
- 1/2 cup (120ml) Frank’s RedHot buffalo wing sauce
- 2 cups (300g) shredded rotisserie chicken
- 1 cup (100g) shredded Monterey Jack cheese
- 1/2 cup (60g) blue cheese crumbles
- 2 stalks green onions, sliced
Instructions
- Preheat oven to 350°F (175°C).
- In a large microwave-safe bowl, combine softened cream cheese, ranch dressing, and buffalo wing sauce.
- Microwave in 30-second intervals, stirring well between each, until the mixture is smooth and creamy (about 1-2 minutes total).
- Stir in the shredded rotisserie chicken and Monterey Jack cheese until the chicken is evenly coated.
- Spread the mixture evenly into a 9×9 inch baking dish.
- Bake for 20-25 minutes until the edges are bubbling and the top is slightly golden.
- Remove from oven and immediately sprinkle with blue cheese crumbles and sliced green onions.
- Serve immediately with sturdy tortilla chips.
Notes
Use full-fat block cream cheese, not spreadable tub cream cheese, to avoid a watery dip. Soften the cream cheese thoroughly before mixing. Add blue cheese on top after baking to maintain texture and distinct flavor. If the dip is too thick, add a splash of milk or extra ranch. If too thin, bake longer or add more cream cheese.
