  • 1 cup (240ml) unsweetened vanilla almond milk
  • 1/2 cup (120g) full-fat plain Greek yogurt
  • 2 large eggs
  • 1/3 cup (75g) brown sugar
  • 1/2 cup (85g) dark chocolate chips (semi-sweet or dark)
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 pinch salt
  • Butter or non-stick spray for greasing the pan

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. In a mixing bowl, combine the rolled oats, baking powder, cinnamon, and a pinch of salt. Whisk to distribute evenly.
  3. In a separate bowl, whisk the eggs until smooth. Add the almond milk, Greek yogurt, and brown sugar. Whisk vigorously until the sugar is mostly dissolved and the mixture is uniform.
  4. Pour the wet mixture over the dry oats. Stir gently but thoroughly until every oat is coated. The batter will look thick and chunky.
  5. Stir in the chocolate chips. Pour the batter into the prepared baking dish and smooth the top with a spatula.
  6. Bake for 35-40 minutes. The oatmeal is done when the edges are golden brown and the center is set but still has a slight jiggle. If the top browns too quickly, cover loosely with foil after 20 minutes.
  7. Remove from the oven and let it cool in the pan for at least 10 minutes to allow it to set for clean cutting.
  8. Slice into squares and serve warm, or store for meal prep.

Notes

Do not use quick oats or steel-cut oats; old-fashioned rolled oats are required for the correct texture. Let the oatmeal cool completely before storing to prevent sogginess. It can be frozen for up to 3 months. For a dairy-free version, swap yogurt for coconut yogurt and milk for oat or soy milk.
