  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder (divided)
  • 1 tsp smoked paprika
  • 1/2 tsp sea salt (divided)
  • Avocado oil or olive oil spray
  • 1/2 cup full-fat mayonnaise
  • 1/4 cup sour cream
  • 12 chipotle peppers in adobo sauce, minced
  • 1 tbsp lemon juice
  • 1 tsp dried parsley

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Set up a dredging station with three shallow bowls: one for flour mixed with half the garlic powder, smoked paprika, and half the salt; one for whisked eggs; and one for panko mixed with remaining garlic powder and salt.
  3. Cut avocados in half, remove pits, peel, and slice into 1/2-inch thick wedges.
  4. Dredge each avocado wedge in the flour mixture, shaking off excess, then dip into the egg wash, and finally press firmly into the panko breadcrumbs to ensure full coverage.
  5. Place coated wedges on the prepared baking sheet, ensuring they are not crowded.
  6. Lightly spray the tops of the fries with oil spray.
  7. Bake for 15-18 minutes until the crumbs are golden brown and crispy, rotating the pan halfway through if needed.
  8. While fries bake, whisk together mayonnaise, sour cream, minced chipotle peppers, remaining garlic powder, lemon juice, and parsley to make the chipotle ranch.
  9. Serve the fries immediately while hot and crispy, with the chipotle ranch on the side.

Notes

Choose avocados that yield slightly to pressure but are not mushy. Do not skip the parchment paper to prevent sticking. Press breadcrumbs firmly onto the avocado to create a seal. Serve immediately for best texture. Leftovers can be refrigerated for 2 days or frozen unbaked. Reheat in an air fryer or toaster oven to maintain crispiness.
