Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar. Set aside.
  2. In a separate bowl or large measuring cup, whisk the buttermilk, melted butter, egg yolks, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; lumps are okay. Let the batter rest for 5-10 minutes.
  4. While the batter rests, whip the 2 egg whites in a clean, dry bowl until stiff peaks form.
  5. Gently fold the whipped egg whites into the batter in two batches using a spatula, cutting down the middle and flipping over until no white streaks remain.
  6. Preheat your Belgian waffle iron. Lightly grease the hot iron.
  7. Pour enough batter to cover the center, leaving room for expansion. Cook for 3-5 minutes until deep golden brown and crisp, and steam diminishes.
  8. Transfer cooked waffles to a wire rack to keep warm and crisp. Repeat with remaining batter, greasing the iron every 2-3 batches.

Notes

For extra crispiness, let finished waffles rest on a wire rack rather than stacking them. To keep waffles warm for a crowd, place them on a wire rack set over a baking sheet in a 200°F (95°C) oven. If you don’t have buttermilk, mix 1 ½ cups milk with 1 ½ tablespoons lemon juice or vinegar and let sit for 5 minutes. Do not microwave waffles for reheating; use a toaster or toaster oven instead.
