Description

These crispy jalapeno popper egg rolls taste like your favorite sports bar appetizer but are wrapped in a shatteringly crisp wrapper. They are spicy, creamy, and ready in about 20 minutes, making them the perfect quick snack or game day treat.

  • 8 oz block cream cheese (softened)
  • 1 cup sharp cheddar cheese (shredded)
  • 6 slices bacon (cooked crispy and crumbled)
  • 2 medium jalapeños (finely diced)
  • 3 stalks green onions (finely chopped)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper (to taste)
  • 1 package egg roll wrappers (2025 wrappers)
  • 1 egg + 1 tablespoon water (beaten for egg wash)
  • Olive oil or avocado oil (for brushing)
  • 1/2 cup mayonnaise (for dip)
  • 1/4 cup sour cream (for dip)
  • 1 small packet dried ranch seasoning
  • 23 tablespoons buttermilk (for dip)
  • 1 tablespoon fresh chives (chopped, for garnish)

Instructions

  1. Cook bacon until crispy, let cool, crumble, and drain excess grease.
  2. In a large bowl, combine softened cream cheese, shredded cheddar, crumbled bacon, diced jalapeños, green onions, garlic powder, smoked paprika, salt, and pepper. Mix until well combined.
  3. Stack egg roll wrappers and cut diagonally to make triangles. Keep unused wrappers covered with a damp towel.
  4. Place a wrapper triangle point-side down. Spoon 1-2 tablespoons of filling onto the center.
  5. Fold the bottom point up over the filling, then fold in the left and right points. Roll tightly toward the top point.
  6. Brush the top point with egg wash and fold over to seal. Press down gently.
  7. Preheat oven to 400°F (200°C) or air fryer to 375°F (190°C).
  8. Place egg rolls seam-side down on a parchment-lined baking sheet or air fryer basket. Brush tops lightly with oil.
  9. Bake for 15-18 minutes (oven) or 8-10 minutes (air fryer), flipping halfway through, until golden brown and crispy.
  10. While egg rolls cook, mix mayonnaise, sour cream, ranch seasoning, and buttermilk until smooth. Garnish with chives.
  11. Serve hot egg rolls immediately with the ranch dip.

Notes

Do not skip the egg wash as it seals the wrappers. Keep wrappers covered with a damp towel to prevent drying out. Drain bacon well to avoid soggy egg rolls. Do not overfill the rolls. For a vegetarian version, skip the bacon and add extra jalapeños and smoked paprika. For gluten-free, use gluten-free wrappers. Leftovers can be stored in the fridge for 3 days and reheated in the oven or air fryer.
