  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp baking powder

  • 1 ½ tsp pumpkin pie spice
  • ¼ cup (56g) unsalted butter, melted
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) brown sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • Pinch of salt
  • Non-stick cooking spray
  • For Glaze: 1 cup (120g) powdered sugar, sifted
  • For Glaze: 2-3 tbsp milk
  • For Glaze: ½ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and generously spray a 6-cavity non-stick donut pan with cooking spray.
  2. In a large bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt until no clumps remain.
  3. In a medium bowl, whisk melted butter, granulated sugar, and brown sugar vigorously for 2 minutes until glossy. Add eggs one at a time, whisking well after each. Stir in vanilla and pumpkin puree until smooth.
  4. Gently fold the dry ingredients into the wet ingredients using a spatula. Stop mixing as soon as flour streaks disappear to avoid tough donuts.
  5. Pipe or spoon batter into donut cavities, filling them about ¾ full.
  6. Bake for 12-14 minutes, or until tops spring back when touched and a toothpick comes out clean.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. Whisk powdered sugar, milk, and vanilla until smooth. Dip tops of cooled donuts into glaze and let set for 10 minutes.

Notes

Ensure pumpkin puree is not watery; drain if necessary. Do not use pumpkin pie filling. Do not overmix the batter. Cool donuts completely before glazing to prevent melting. Best eaten the same day or stored in an airtight container for up to 2 days.
