Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large mixing bowl, combine softened butter and 1 cup granulated sugar. Mix until creamy and combined.
- Add vegetable oil, eggs, and vanilla extract. Mix until smooth and glossy.
- In a separate medium bowl, whisk together flour, baking soda, cream of tartar, salt, and 2 teaspoons cinnamon.
- Gradually add dry ingredients to wet ingredients. Mix until just combined; do not overmix.
- In a shallow bowl, mix 1/2 cup sugar and 2 tablespoons cinnamon for the coating.
- Roll dough into walnut-sized balls, coat in cinnamon sugar, and place on baking sheets 2 inches apart.
- Bake for 9-11 minutes until edges are set and lightly golden, but centers look soft. Rotate pans halfway through.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
