  • 4 boneless, center-cut pork chops (approx. 1 lb / 450g, 1 inch thick)
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • Salt and black pepper to taste

Instructions

  1. Pat pork chops dry with paper towels. Season both sides generously with salt and pepper. Dust lightly with flour, shaking off excess.
  2. Heat a large skillet over medium-high heat. Add butter and melt until foaming but not brown.
  3. Sear chops for 4-5 minutes on the first side until golden brown. Flip and cook 3-4 minutes on the other side. Remove chops and set aside, leaving fond in the pan.
  4. Reduce heat to medium-low. Add minced garlic to the pan and stir for 1 minute until fragrant.
  5. Pour in heavy cream, scraping the bottom of the pan to release browned bits. Simmer gently for 2-3 minutes until slightly thickened.
  6. Reduce heat to low. Sprinkle in Parmesan cheese and whisk continuously until melted and smooth.
  7. Return pork chops to the skillet, nestling them into the sauce. Warm through for 1 minute, spooning sauce over the top. Serve immediately.

Notes

Do not overcook the pork chops; they are done at 145°F. Use freshly grated Parmesan for a smooth sauce, as pre-grated cheese contains anti-caking agents. If the sauce is too thin, simmer longer; if too thick, add a splash of broth. For a richer flavor, deglaze with white wine before adding cream.
