- 4 boneless, center-cut pork chops (approx. 1 lb / 450g, 1 inch thick)
- 4 cloves garlic, minced
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- Salt and black pepper to taste
Instructions
- Pat pork chops dry with paper towels. Season both sides generously with salt and pepper. Dust lightly with flour, shaking off excess.
- Heat a large skillet over medium-high heat. Add butter and melt until foaming but not brown.
- Sear chops for 4-5 minutes on the first side until golden brown. Flip and cook 3-4 minutes on the other side. Remove chops and set aside, leaving fond in the pan.
- Reduce heat to medium-low. Add minced garlic to the pan and stir for 1 minute until fragrant.
- Pour in heavy cream, scraping the bottom of the pan to release browned bits. Simmer gently for 2-3 minutes until slightly thickened.
- Reduce heat to low. Sprinkle in Parmesan cheese and whisk continuously until melted and smooth.
- Return pork chops to the skillet, nestling them into the sauce. Warm through for 1 minute, spooning sauce over the top. Serve immediately.
Notes
Do not overcook the pork chops; they are done at 145°F. Use freshly grated Parmesan for a smooth sauce, as pre-grated cheese contains anti-caking agents. If the sauce is too thin, simmer longer; if too thick, add a splash of broth. For a richer flavor, deglaze with white wine before adding cream.
