A family-friendly slow cooker recipe for tender, shreddable beef sandwiches with homemade au jus, designed to be simple enough for kids to help with.

- 3 to 4 lbs chuck roast
- 32 oz low-sodium beef broth
- 2 medium yellow onions, sliced into half-moons
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 1 tbsp hoisin sauce
- 8 to 10 soft French or Italian rolls
- 8 slices provolone cheese
Instructions
- Trim large pieces of fat from the chuck roast and pat dry. Place in the slow cooker (optional: sear in a skillet for 2 minutes per side).
- Scatter sliced onions, minced garlic, dried thyme, dried rosemary, and bay leaf over the roast.
- Pour in beef broth and hoisin sauce. Stir gently. Set slow cooker to Low for 8 hours.
- After cooking, remove roast and shred meat using two forks. Discard bay leaf and large onion chunks if desired. Return meat to slow cooker on Warm setting.
- Strain cooking liquid through a fine-mesh sieve into a small saucepan. Simmer to create au jus. Adjust seasoning with salt or water if needed.
- Preheat broiler. Slice rolls in half and place cut-side up on a foil-lined baking sheet. Top bottom halves with provolone cheese.
- Broil for 1-2 minutes until cheese is melted and bubbly. Watch closely to prevent burning.
- Pile shredded beef onto the cheese, top with the other half of the roll, and serve immediately with warm au jus on the side.
Notes
Do not open the slow cooker lid during cooking. Let the shredded beef rest for 5 minutes before assembling to retain juices. Freeze beef and au jus separately, not assembled sandwiches. Use low-sodium broth to control salt levels.
