- 1.5 lbs salmon fillets, cut into 1-inch cubes
- 4 tbsp unsalted butter, divided
- 4 large cloves garlic, minced
- 3 tbsp mayonnaise
- 2 tbsp Sriracha sauce
- 2 tbsp fresh lemon juice, divided
- 1 tsp dried parsley
- 1 tsp olive oil (for tossing salmon)
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Pat salmon fillets dry with paper towels and cut into 1-inch cubes. Toss cubes in a bowl with 1 tsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper. Set aside.
- In a small microwave-safe bowl, whisk together 3 tbsp mayonnaise, 2 tbsp Sriracha, and 1 tbsp lemon juice. Adjust spice to taste and set aside.
- Heat a large non-stick skillet over medium-high heat. Add 2 tbsp butter and let it melt and foam slightly.
- Add salmon cubes to the skillet in a single layer, ensuring not to overcrowd the pan. Cook undisturbed for 2-3 minutes until sides turn opaque and golden.
- Flip salmon bites and cook for another 2-3 minutes until internal temperature reaches 145°F (63°C) or flesh flakes easily.
- Reduce heat to medium. Add remaining 2 tbsp butter and minced garlic to the pan. Toss salmon gently to coat in garlic butter for 1 minute.
- Remove pan from heat immediately to prevent burning the garlic.
- Transfer salmon to a serving platter. Drizzle with remaining 1 tbsp lemon juice and sprinkle with dried parsley.
- Serve immediately with Sriracha mayo on the side for dipping or drizzling.
Notes
Ensure salmon is patted completely dry before cooking to achieve a good sear rather than steaming. Do not overcrowd the pan; cook in batches if necessary. Add garlic at the end to prevent burning. Leftovers keep in the fridge for up to 2 days but do not freeze well.
