  • 1/2 cup (120g) canned pumpkin puree (not pie filling)
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (60ml) water
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt

Instructions

  1. Combine pumpkin puree, sugar, water, pumpkin pie spice, and salt in a small saucepan over medium-low heat. Whisk while cold to dissolve sugar and prevent clumping.
  2. Heat the mixture, stirring constantly for 4-5 minutes until the sugar dissolves and the mixture becomes glossy and smooth. Ensure the pumpkin does not stick to the bottom.
  3. Let the mixture simmer gently for 3-4 minutes until it thickens slightly. Test by dipping a spoon; if it coats the back and holds a line, it is ready. Remove from heat.
  4. Allow the syrup to cool in the pan for 5-10 minutes, during which it will thicken further. Pour into a clean glass jar or bottle and seal tightly.

Notes

Use 100% pure pumpkin puree, not pie filling. If the puree is watery, strain it through a cheesecloth or paper towel to remove excess liquid. Store in the refrigerator for up to two weeks or freeze in ice cube trays for up to three months. The syrup will thicken more as it cools.
