- 1/4 cup (60ml) real maple syrup
- 4 to 4.5 cups (500-560g) all-purpose flour
- 2 tsp pumpkin pie spice
- 1 tsp salt
- 1 large egg
- 8 oz (225g) full-fat cream cheese, softened
- 1/4 cup (60ml) heavy whipping cream
- 2 tbsp (30ml) maple syrup
- 1/2 tsp vanilla extract
Instructions
- Bloom the yeast: In a stand mixer bowl, combine warm water, maple syrup, and a pinch of sugar. Sprinkle yeast on top and let sit for 5-10 minutes until foamy.
- Mix the dough: Add pumpkin puree, egg, pumpkin pie spice, and salt to the yeast mixture. Switch to a dough hook and gradually add flour. Knead on medium speed for 5-7 minutes until smooth and elastic.
- First rise: Place dough in a greased bowl, cover, and let rise in a warm spot for 60-90 minutes until doubled in size.
- Shape the bagels: Punch down dough and divide into 8 equal pieces. Roll into balls, poke a hole in the center, and stretch into 3-inch bagels. Place on a parchment-lined sheet and rest for 15 minutes.
- Prepare the grill: Preheat grill to medium-high (375-400°F). Clean and oil grates thoroughly to prevent sticking.
- Grill the bagels: Place bagels on the grill and cook for 6-7 minutes per side until golden brown and firm. Internal temperature should reach 190°F.
- Make the whipped cream cheese: While bagels grill, beat softened cream cheese, heavy cream, maple syrup, and vanilla until light and fluffy.
- Assemble and serve: Let bagels cool for 5 minutes, slice in half, and slather generously with whipped maple cream cheese.
Notes
Ensure grates are well-oiled to prevent sticking. Monitor heat closely as pumpkin sugar burns easily. Cream cheese must be fully softened for a smooth spread. Dough should be slightly tacky but not sticky.
