Ingredients
Scale
- 3 cups (375g) Bread Flour
- 1 cup (240ml) Warm Water (105°F-115°F)
- 2 packets (4 1/2 tsp) Active Dry Yeast
- 2 tbsp (30g) White Granulated Sugar
- 4 tbsp (57g) Unsalted Butter, melted
- 1 large Egg
- 1 1/2 tsp (9g) Salt
- 4 tbsp (57g) Unsalted Butter (for glaze)
- 3 tbsp (45ml) Honey
- 1/2 tsp Vanilla Extract
- 1/4 tsp Sea Salt (for glaze topping)
Instructions
- Activate the yeast: In a stand mixer bowl, combine warm water, sugar, and yeast. Stir gently and let sit for 5-10 minutes until foamy.
- Mix the dough: Add melted butter, egg, and salt to the yeast mixture. Mix on low speed with a dough hook until combined. Gradually add bread flour, one cup at a time, until the dough pulls away from the sides of the bowl.
- Knead the dough: Increase mixer speed to medium-low and knead for 5-7 minutes until smooth and elastic. Perform the windowpane test to ensure gluten development.
- First rise: Transfer dough to a greased bowl, cover, and let rise in a warm spot for 1-1.5 hours until doubled in size.
- Shape the rolls: Punch down the dough and divide into 12 equal pieces (approx. 70g each). Roll into smooth balls and place seam-side down in a greased 9-inch round cake pan.
- Second rise: Cover the pan and let rolls rise for 30-45 minutes until they puff up and touch each other.
- Bake: Preheat oven to 375°F (190°C). Bake rolls for 15-18 minutes until golden brown and internal temperature reaches 190°F (88°C).
- Apply glaze: While rolls bake, melt butter and honey in a saucepan. Whisk in vanilla and salt. Immediately brush the warm glaze over the hot rolls after removing them from the oven. Sprinkle with flaky sea salt if desired.
Notes
Ensure water temperature is between 105°F and 115°F to activate yeast without killing it. The glaze must be applied immediately while rolls are hot to allow absorption. For make-ahead options, shape rolls and refrigerate overnight, then let rise at room temperature before baking.
