  • 4 tbsp (57g) unsalted butter
  • 2 large eggs
  • 2 egg yolks
  • 1/4 cup (50g) granulated white sugar
  • 2 tbsp (16g) all-purpose flour
  • 1/4 tsp salt
  • 1 tbsp unsweetened cocoa powder
  • 1 tsp vanilla extract
  • Extra butter for greasing ramekins
  • Cocoa powder or sugar for dusting ramekins

Instructions

  1. Butter the inside of 6 ramekins (4-6 oz each) generously. Dust with cocoa powder or sugar, tapping out the excess.
  2. Combine chopped dark chocolate and butter in a heat-proof bowl. Melt over indirect grill heat or using a double boiler until smooth. Set aside to cool slightly.
  3. In a separate bowl, whisk whole eggs, egg yolks, and sugar vigorously for 2-3 minutes until pale and thickened.
  4. Pour the melted chocolate mixture into the egg mixture and whisk gently to combine.
  5. Add flour, cocoa powder, salt, and vanilla. Fold with a spatula until just combined. Do not overmix.
  6. Divide batter evenly among prepared ramekins (filling them about 3/4 full). Chill in the refrigerator for 15 minutes.
  7. Prepare grill for direct medium heat, aiming for 375°F (190°C). Place ramekins directly on the grill grates and close the lid.
  8. Grill for 12-14 minutes. The edges should be set and puffed, but the center must still jiggle like jelly when shaken.
  9. Remove from grill and let sit for 1 minute. Run a knife around the edge, invert onto a plate, and serve immediately.

Notes

Chilling the batter before grilling helps the cakes hold their shape and ensures a molten center. Do not overbake; the center should jiggle like jelly, not water. If using mini muffin tins, reduce cooking time to 8-10 minutes. For a gluten-free option, substitute flour with almond flour or a 1:1 gluten-free blend. For dairy-free, use dairy-free chocolate and coconut oil.
