Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar on medium-high speed for 3-4 minutes until pale and fluffy.
  3. Reduce mixer speed to medium-low. Add the egg, egg yolk, vanilla extract, and almond extract. Mix until just combined, scraping down the sides of the bowl.
  4. In a separate medium bowl, whisk together the almond flour, baking soda, and salt to break up any clumps.
