  • 1/2 cup (113g) unsalted butter, room temperature
  • 1/2 cup (60g) confectioners’ sugar
  • 1 cup (120g) all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup (200g) granulated sugar
  • 3 large eggs, room temperature
  • 1/2 cup (120ml) fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 cup (120g) confectioners’ sugar
  • Extra powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly grease.
  2. In a medium bowl, mix softened butter, 1/2 cup confectioners’ sugar, flour, and salt until it resembles wet sand.
  3. Press the crust mixture firmly into the bottom of the prepared pan.
  4. Blind bake the crust for 15 minutes until lightly golden around the edges. Remove from oven and leave oven on.
  5. In a large bowl, whisk granulated sugar and eggs until smooth. Add lemon juice, lemon zest, and 1 cup confectioners’ sugar. Whisk vigorously until pale and slightly thickened.
  6. Pour the filling over the warm crust and smooth the top.
  7. Bake for 20-25 minutes until edges are set and the center has a slight jiggle.
  8. Cool completely in the pan at room temperature, then refrigerate for at least 2 hours or overnight.
  9. Lift bars out using parchment overhang, dust with powdered sugar, and cut into squares.

Notes

Ensure eggs are at room temperature to prevent curdling. Do not skip blind baking the crust to avoid sogginess. Bars must cool completely and be chilled to set properly. For clean cuts, use a sharp knife and wipe between cuts. Can be stored in the fridge for up to 5 days.
