Instructions

  1. Prep the raisins and oats: Soak raisins in hot water for 10 minutes, then drain and pat dry. Toast oats in a dry skillet over medium heat for 5 minutes until nutty and golden. Transfer to a large mixing bowl.
  2. Cream the butter and sugar: In a separate large bowl, beat softened butter and brown sugar with a hand mixer on medium-high speed for 2-3 minutes until pale and fluffy.
  3. Add eggs and vanilla: Beat in eggs one at a time, then mix in vanilla extract until just combined.
  4. Combine dry ingredients: Stir flour, baking soda, salt, and cinnamon into the bowl with the toasted oats.
  5. Fold everything together: Gradually add the dry oat mixture to the wet butter mixture. Fold gently with a wooden spoon. Add drained raisins and fold until just combined. Do not overmix.
