  • 6 large eggs
  • 1 cup (225g) cottage cheese (small-curd preferred)
  • 1 cup fresh spinach (chopped) OR ½ cup frozen spinach (thawed and squeezed dry)
  • ½ cup (50g) shredded cheese (mix of cheddar and mozzarella)
  • ½ teaspoon salt
  • Black pepper to taste
  • Cooking spray (olive oil or butter)

Instructions

  1. Preheat oven to 350°F (175°C). Generously spray a 12-cup muffin tin with cooking spray.
  2. Add eggs, cottage cheese, shredded cheese, salt, and pepper to a blender.
  3. If using fresh spinach, add it to the blender. Blend on high for 30-45 seconds until the mixture is completely smooth and resembles pancake batter.
  4. If using frozen spinach, fold it into the blended mixture with a spatula to keep distinct green flecks.
  5. Pour the mixture into the prepared muffin cups, filling them about ¾ full.
  6. Bake in the center of the oven for 20-22 minutes, or until puffed up and set in the center (a toothpick should come out clean).
  7. Let cool in the pan for 5 minutes to set completely.
  8. Run a knife around the edges and remove from the tin. Serve warm or cold.

Notes

Ensure frozen spinach is thoroughly squeezed dry to prevent soggy egg bites. Blend the cottage cheese until completely smooth for the best texture. These store well in the fridge for up to 4 days. Do not freeze as the texture may become watery. Reheat gently in the microwave for 30-45 seconds with a splash of water to maintain moisture.
