  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 2 large eggs (room temperature)
  • 1/2 cup granulated sugar (for coating)
  • 2 tablespoons ground cinnamon (for coating)
  • Neutral oil (for frying, e.g., canola or vegetable)
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. In a medium saucepan, combine water, butter, 1 teaspoon sugar, and salt. Bring to a rolling boil over medium-high heat.
  2. Remove from heat and immediately add all the flour at once. Stir vigorously with a wooden spoon or spatula until a shaggy ball forms.
  3. Return to low heat and cook for 1-2 minutes, stirring constantly, until a thin film forms on the bottom of the pan.
  4. Transfer dough to a mixing bowl and let cool for 5 minutes.
  5. Beat in eggs one at a time, mixing thoroughly after each addition until the dough is smooth, glossy, and pipeable.
  6. Heat 2 inches of neutral oil in a Dutch oven or deep fryer to 375°F (190°C).
  7. Mix 1/2 cup sugar and 2 tablespoons cinnamon in a shallow bowl.
  8. Fill a piping bag fitted with a star tip with the dough.
  9. Pipe 5-6 inch strips of dough directly into the hot oil, cutting with a knife or shears.
  10. Fry 3-4 churros at a time for 2-3 minutes per side, turning occasionally, until deep golden brown and crispy.
  11. Remove with a slotted spoon and drain on a wire rack over paper towels for 30 seconds.
  12. While still hot, toss churros in the cinnamon sugar mixture.
  13. For the sauce, melt chocolate chips with heavy cream until smooth.
  14. Serve immediately with chocolate dipping sauce.

Notes

Ensure oil is at 375°F to prevent greasy churros. Cook the flour mixture thoroughly to dry out excess moisture for a hollow, airy texture. Churros are best served immediately but can be frozen raw and fried later.
