  • 8 oz (225g) full-fat cream cheese, softened
  • 1/2 cup (120g) full-fat sour cream
  • 1/2 cup (120g) mayonnaise
  • 14 oz (400g) jarred artichoke hearts, drained and chopped
  • 10 oz (280g) frozen spinach, thawed and squeezed dry
  • 1 cup (100g) shredded mozzarella cheese
  • 1/2 cup (50g) grated Parmesan cheese
  • 1 teaspoon garlic powder (optional)
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Ensure cream cheese is softened. Thaw spinach and drain artichoke hearts.
  3. In a large mixing bowl, combine softened cream cheese, sour cream, and mayonnaise. Beat with an electric mixer or fork until smooth and creamy.
  4. Squeeze thawed spinach in a clean kitchen towel until almost dry. Add spinach and chopped artichoke hearts to the bowl. Stir to distribute evenly.
  5. Stir in shredded mozzarella, grated Parmesan, garlic powder, and red pepper flakes (if using) until well combined.
  6. Transfer mixture to an 8×8 inch baking dish or 9-inch pie plate. Spread evenly.
  7. Bake for 20-25 minutes until edges are bubbly and top is golden brown. Optionally broil for 1-2 minutes for a crispy top.
  8. Remove from oven and let cool for 5 minutes. Garnish with fresh parsley and serve warm.

Notes

Ensure spinach is squeezed very dry to prevent a watery dip. Cream cheese must be softened for smooth mixing. Can be made up to 24 hours in advance and refrigerated before baking. Leftovers can be stored in the fridge for up to 3 days.
