Description
A quick, restaurant-quality shrimp scampi made with butter, garlic, lemon, and white wine. This easy weeknight dinner is ready in 15 minutes and requires minimal cleanup.

- 1 pound large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 2 tablespoons extra virgin olive oil
- 6–8 cloves garlic, minced
- ½ cup dry white wine (or low-sodium chicken broth)
- 1 large lemon (zest and juice)
- ¼ cup fresh parsley, chopped
- ½ teaspoon red pepper flakes
- Salt and black pepper to taste
- Linguine or spaghetti for serving (optional)
Instructions
- Thaw frozen shrimp if necessary, then drain and pat completely dry with paper towels. Season lightly with salt and pepper.
- Mince the garlic finely, zest the lemon, and chop the parsley. Have all ingredients ready.
- Heat a large skillet over medium-high heat with 1 tablespoon of olive oil. Add shrimp in a single layer and cook for 1-2 minutes per side until pink. Remove shrimp to a plate.
- Reduce heat to medium. Add remaining 1 tablespoon olive oil and butter to the skillet. Once melted, add garlic and red pepper flakes. Sauté for 30-60 seconds until fragrant.
- Pour in white wine (or broth) and scrape up browned bits from the pan. Simmer for 1-2 minutes to reduce slightly.
- Stir in lemon zest and lemon juice.
- Return shrimp and any juices to the skillet. Toss in sauce for 30 seconds to heat through. Turn off heat and stir in parsley.
- Serve immediately over cooked linguine or with crusty bread.
Notes
Do not overcook the shrimp as they become rubbery. Pat shrimp dry before cooking to ensure a good sear. Watch garlic closely as it burns easily. If serving with pasta, reserve some starchy pasta water to help emulsify the sauce.
