  • 1 cup Monterey Jack cheese, shredded
  • 4 ounces cream cheese, softened
  • ½ cup heavy cream
  • 2 medium jalapeños, diced
  • 4 stalks green onions, sliced
  • ¼ cup fresh cilantro, chopped
  • Tortilla chips for serving

Instructions

  1. Prep ingredients: Chop onion, mince garlic, dice jalapeños, shred cheeses, and let cream cheese soften.
  2. Brown the beef: Heat a large skillet over medium-high heat. Add ground beef and cook until browned (5-7 minutes). Drain excess grease, leaving about 1 tablespoon.
  3. Sauté aromatics: Add diced onion and jalapeños to the beef. Cook for 2-3 minutes until onion is translucent. Add minced garlic in the last minute.
  4. Season the beef: Stir in taco seasoning and 2 tablespoons of water. Cook for 1-2 minutes until liquid evaporates.
  5. Build the cheese sauce: Reduce heat to low. Stir in softened cream cheese until melted. Gradually add shredded cheddar and Monterey Jack cheese, stirring constantly until smooth.

Notes

Shred your own cheese to avoid anti-caking agents that prevent smooth melting. Add cream cheese off the heat to prevent the sauce from breaking. If the sauce is too thick, add a splash of heavy cream. Do not freeze this dip as the dairy will separate upon thawing.
