  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup sun-dried tomatoes (packed in oil), chopped
  • 1 cup chicken broth (low-sodium)
  • 1 cup heavy cream
  • 45 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Place chicken breasts between plastic wrap and pound to an even 1/2-inch thickness. Season both sides generously with salt, pepper, Italian seasoning, garlic powder, and onion powder.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-6 minutes per side until golden brown. Remove chicken to a plate and set aside.
  3. Reduce heat to medium. Add minced garlic and red pepper flakes to the pan; sauté for 30 seconds until fragrant.
  4. Add chopped sun-dried tomatoes and cook for 1 minute.
  5. Pour in chicken broth and scrape up browned bits from the bottom of the pan. Simmer for 2-3 minutes to reduce slightly.
  6. Reduce heat to low. Stir in heavy cream and simmer for 5-7 minutes until the sauce thickens slightly.
  7. Remove pan from heat. Stir in grated Parmesan cheese until fully melted and smooth.
  8. Return chicken to the pan and spoon sauce over it. Simmer for 2-3 minutes until chicken reaches an internal temperature of 165°F.
  9. Remove from heat, stir in fresh basil, and serve immediately.

Notes

Pound chicken evenly for consistent cooking. Use oil from the sun-dried tomato jar for extra flavor. Remove pan from heat before adding cheese to prevent graininess. Serve over pasta, rice, or mashed potatoes.
