Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper.
  2. In a large bowl, whisk together the gluten-free flour blend, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the softened butter and granulated sugar together until light and fluffy (about 2-3 minutes).
  4. Add eggs one at a time, beating well after each addition. Mix in lemon zest and lemon juice. Mix in buttermilk until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or folding gently until just combined. Do not overmix.
  6. Gently fold in the blueberries. If using frozen berries, toss them in 1 teaspoon of flour first to prevent sinking.
  7. Pour batter into the prepared loaf pan and smooth the top. Bake at 350°F for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Tent with foil if browning too quickly.
