Ingredients

  • 2 large sweet potatoes (about 1 lb / 450g), peeled and diced into half-inch cubes
  • 12 oz (340g) breakfast sausage (turkey, chicken, or pork)
  • 1 medium yellow or white onion, diced
  • 1 red or green bell pepper, diced
  • 2 tablespoons olive oil or avocado oil
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1 teaspoon sea salt (adjust to taste)
  • 1/2 teaspoon freshly cracked black pepper
  • Optional: 2 cups spinach or kale, chopped
  • Optional: Hot sauce for serving

Instructions

  1. Prep ingredients: Dice sweet potatoes, onion, and bell pepper. Mince garlic and measure spices.
  2. Heat olive oil in a 12-inch cast iron skillet over medium-high heat.
  3. Add diced sweet potatoes in a single layer. Cook undisturbed for 3-4 minutes to form a crust, then stir and cook for another 4-5 minutes until tender and crispy.
  4. Push potatoes to one side or mix in. Add sausage meat to the pan, breaking it up with a spatula. Cook for 5 minutes until browned. Drain excess grease if necessary.
  5. Add diced onions and bell peppers to the skillet. Sprinkle with smoked paprika, dried thyme, salt, and pepper. Toss to combine.
  6. Cook for 2 minutes until onions are translucent. Add minced garlic and cook for 30 seconds until fragrant.
  7. Taste and adjust seasoning. If adding greens, toss them in now to wilt. Serve immediately.

Notes

Do not overcrowd the pan to ensure potatoes crisp up rather than steam. If using frozen diced sweet potatoes, thaw slightly and pat dry before cooking. For leftovers, reheat in a skillet with a splash of water to restore crispiness.
