  • 1 can (15 oz / 425g) black beans (rinsed and drained)
  • 1 cup (150g) cooked rotisserie chicken (shredded)
  • 1 cup (240g) smoky or fire-roasted salsa
  • 1 large bag (12 oz / 340g) sturdy tortilla chips
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin

Instructions

  1. Preheat oven to 375°F (190°C). Line a large rimmed baking sheet with parchment paper or foil.
  2. In a small bowl, toss the shredded chicken and rinsed black beans with smoked paprika and cumin.
  3. Spread tortilla chips in a single, even layer on the prepared baking sheet.
  4. Sprinkle the spiced chicken and beans evenly over the chips.
  5. Generously cover with the grated sharp cheddar cheese.
  6. Bake for 8-10 minutes until cheese is melted, bubbling, and edges are slightly golden.
  7. Remove from oven and let cool for 2 minutes to allow cheese to set.

Notes

Do not use pre-shredded cheese as it contains anti-caking agents that prevent smooth melting. Ensure chips are in a single layer to prevent sogginess.
