- 8 oz (225g) block of sharp cheddar cheese (grated)
- 1 can (15 oz / 425g) black beans (rinsed and drained)
- 1 cup (150g) cooked rotisserie chicken (shredded)
- 1 cup (240g) smoky or fire-roasted salsa
- 1 large bag (12 oz / 340g) sturdy tortilla chips
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
Instructions
- Preheat oven to 375°F (190°C). Line a large rimmed baking sheet with parchment paper or foil.
- In a small bowl, toss the shredded chicken and rinsed black beans with smoked paprika and cumin.
- Spread tortilla chips in a single, even layer on the prepared baking sheet.
- Sprinkle the spiced chicken and beans evenly over the chips.
- Generously cover with the grated sharp cheddar cheese.
- Bake for 8-10 minutes until cheese is melted, bubbling, and edges are slightly golden.
- Remove from oven and let cool for 2 minutes to allow cheese to set.
- Serve immediately, optionally topped with fresh cilantro, jalapeños, or Greek yogurt.
Notes
Do not use pre-shredded cheese as it contains anti-caking agents that prevent smooth melting. Ensure chips are in a single layer to prevent sogginess. Let nachos cool for 2 minutes before serving to help the cheese set. Leftovers can be stored in the fridge for up to 3 days and reheated in the oven at 350°F.
