  • ½ cup extra virgin olive oil
  • 1 teaspoon poppy seeds
  • Salt and black pepper to taste

Instructions

  1. Wash the spinach and strawberries thoroughly. Pat the spinach completely dry using paper towels or a salad spinner to ensure the dressing adheres properly.
  2. Hull and slice the strawberries into quarters or halves. Crumble the feta cheese if not already pre-crumbled.
  3. Heat a small skillet over medium heat. Add the walnuts or pecans in a single layer and toast for 2-3 minutes until fragrant and lightly browned. Remove from heat and let cool.
  4. In a small mason jar, combine the apple cider vinegar, honey, Dijon mustard, poppy seeds, salt, and pepper. Screw the lid on tight and shake vigorously for 15 seconds.
  5. While shaking the jar, slowly drizzle in the extra virgin olive oil until the dressing is emulsified and creamy. Taste and adjust seasoning if needed.
  6. Place the dry spinach in a large salad bowl. Add the sliced strawberries and crumbled feta.
  7. Drizzle about three-quarters of the dressing over the salad. Toss gently with salad tongs or large spoons to coat the leaves without crushing the fruit.
  8. Sprinkle the toasted nuts over the top and give one final gentle toss.
  9. Serve immediately for the best texture and flavor.

Notes

Ensure spinach is completely dry before dressing to prevent sogginess. Toasting nuts enhances flavor significantly. The dressing can be made ahead and stored in the fridge for up to a week. Do not freeze this salad as the greens will wilt. For a heartier meal, add grilled chicken or bacon bits.
