An ultra-moist pumpkin banana bread that balances earthy pumpkin with sweet ripe bananas. This quick bread is tender, airy, and ready in just 60 minutes without needing a mixer.

- 1 cup (240g) pure pumpkin puree
- 3 large ripe bananas (approx. 1 1/2 cups mashed)
- 1/2 cup (120ml) neutral oil (vegetable or canola)
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 2 cups (250g) all-purpose flour
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 loaf pan and line the bottom with parchment paper if desired.
- In a large mixing bowl, mash the ripe bananas until smooth. Add the pumpkin puree, oil, sugar, and eggs. Whisk until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- Pour the dry ingredients into the wet ingredients. Gently fold together with a spatula or wooden spoon until just combined. Do not overmix; a few small lumps are okay.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-55 minutes. If the top browns too quickly, tent with aluminum foil after 40 minutes. Test with a toothpick inserted in the center; it should come out clean or with moist crumbs.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely (at least 20 minutes) before slicing.
Notes
Use very ripe, spotted bananas for maximum sweetness. Do not use pumpkin pie filling; use 100% pure pumpkin puree. Oil is preferred over butter to maintain moisture. Do not refrigerate as it dries out the bread. Can be frozen for up to 3 months.
