  • 1/2 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 loaf pan and line the bottom with parchment paper if desired.
  2. In a large mixing bowl, mash the ripe bananas until smooth. Add the pumpkin puree, oil, sugar, and eggs. Whisk until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  4. Pour the dry ingredients into the wet ingredients. Gently fold together with a spatula or wooden spoon until just combined. Do not overmix; a few small lumps are okay.
  5. Pour the batter into the prepared loaf pan and smooth the top.
