Description
A refreshing, hydrating summer drink made with ripe watermelon, fresh mint, and lime juice. This simple, naturally gluten-free and vegan beverage is easy to make and perfect for hot days.
Ingredients
- 8 cups cubed ripe watermelon (about 2 kg)
- 1 cup packed fresh mint leaves (about 30g)
- 1/2 cup fresh lime juice (from 3–4 large limes)
- 2–4 tablespoons simple syrup or honey (optional)
- 1–2 cups cold water
- Ice cubes
- Extra mint sprigs for garnish
- Lime wheels for garnish
- Pinch of salt (optional, to enhance sweetness)
Instructions
- Prep the watermelon by cutting it into rough 1-inch cubes and tossing them into a high-speed blender.
- Add the fresh mint leaves and half of the lime juice to the blender with the watermelon.
- Blend on high until completely smooth, about 1-2 minutes. Add a splash of water if needed to help the blender move.
- Place a fine-mesh strainer over a large pitcher and pour the blended mixture through it. Press the liquid out of the pulp with a spoon and discard the pulp.
- Taste the strained juice and add the remaining lime juice and simple syrup or honey if needed. Add a pinch of salt if the flavor feels flat. Stir well to combine.
- Add 1-2 cups of cold water to the pitcher to reach your preferred consistency. Stir and taste.
- Refrigerate for at least 30 minutes before serving to let flavors meld, or serve immediately over ice.
- Pour over ice cubes and garnish with a sprig of fresh mint and a lime wheel.
Notes
Use the best ripe watermelon you can find for the sweetest flavor. Fresh mint is essential for the best aroma; dried mint lacks the necessary volatile oils. If the drink is too thick, add more water. If it’s too sweet, add more lime juice. The drink keeps well in the fridge for up to 3 days; stir before serving as sediment may settle. For a smoother texture, straining is recommended. You can freeze watermelon cubes to use as ice to prevent dilution.
