- 2 large boneless, skinless chicken breasts (about 600g)
- ½ cup all-purpose flour (60g)
- Kosher salt and black pepper
- 2 tablespoons extra virgin olive oil
- 4 tablespoons unsalted butter (divided)
- ½ cup dry white wine (120ml)
- ½ cup low-sodium chicken broth (120ml)
- ¼ cup fresh lemon juice (60ml, from about 2 lemons)
- 1 teaspoon lemon zest
- 2 tablespoons capers, drained
- 2 tablespoons fresh parsley, chopped
Instructions
- Place chicken breasts between plastic wrap and pound to ½ inch thickness. Season both sides with salt and pepper.
- Spread flour on a plate. Dredge chicken in flour, shaking off excess, and press gently to coat.
- Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden and cooked through (165°F). Remove to a plate and tent with foil.
- Reduce heat to medium. Add remaining 2 tablespoons butter to the pan. Add capers and sauté for 30 seconds.
- Pour in white wine and lemon juice, scraping up brown bits from the pan. Simmer for 2-3 minutes until reduced by half.
- Stir in chicken broth and lemon zest. Simmer for 1 minute. Taste and adjust seasoning if needed. Remove from heat.
- Return chicken to the pan, spooning sauce over the top. Garnish with parsley and serve immediately.
Notes
Pounding the chicken is crucial for even cooking. Use a dry white wine you enjoy drinking. If substituting wine, add white wine vinegar for acidity. Do not freeze this dish as the sauce may separate.
