  • ½ cup water or chicken broth

Instructions

  1. In a large bowl, whisk together Greek yogurt, lemon juice, grated ginger, minced garlic, 2 teaspoons garam masala, turmeric, cayenne, and salt. Add chicken thighs and toss to coat evenly. Cover and refrigerate for at least 30 minutes (ideally 2-4 hours).
  2. Heat a large skillet over medium-high heat with a tablespoon of oil. Remove chicken from marinade, letting excess drip off. Sear chicken in batches for 3-4 minutes per side until charred. Remove chicken and set aside.
  3. In the same skillet, reduce heat to medium and melt butter. Add diced onion and cook for 5-6 minutes until soft. Add minced garlic and cook for 1 minute until fragrant. Stir in tomato paste and cook for 1 minute.
