  • ½ cup maple syrup
  • 2 tablespoons heavy cream

  • Pinch of salt (for syrup)

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate medium bowl or measuring cup, whisk the buttermilk, egg, and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; lumps are okay.
  4. Heat a non-stick skillet over medium heat for about 2 minutes.
  5. Lightly grease the skillet with butter or oil.
  6. Pour about ¼ cup of batter per pancake onto the skillet.
  7. Cook until bubbles form on the surface and edges look set (2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
  8. While pancakes cook, melt butter in a small saucepan over medium heat until it turns amber and smells nutty.
  9. Remove brown butter from heat and stir in maple syrup, heavy cream, vanilla, and a pinch of salt.

Notes

Do not overmix the batter to ensure fluffy pancakes. Use fresh baking powder for best results. If you don’t have buttermilk, substitute with milk plus lemon juice or vinegar. Keep cooked pancakes warm in a 200°F oven while making the rest of the batch.
