Description

Ingredients

  • 1.5 pounds chicken or turkey sausage (sugar-free, compliant)
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 2 large heads broccoli florets (about 600g)
  • 2 medium red bell peppers (about 300g)
  • 1 large red onion (about 200g)
  • 2 medium zucchini (about 400g)
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line two half-sheet pans with parchment paper.
  2. Wash and thoroughly dry all vegetables. Moisture prevents proper roasting.
  3. Chop broccoli into bite-sized florets, slice bell peppers into 1-inch strips, cut red onion into wedges, and slice zucchini into half-moons.
  4. Place chopped vegetables in a large mixing bowl. Drizzle with olive oil and sprinkle with garlic powder, onion powder, thyme, salt, and pepper. Toss until evenly coated.
  5. Slice sausage links into ½-inch rounds or diagonal pieces.
  6. Spread seasoned vegetables in a single layer on one sheet pan, ensuring they are not crowded.
  7. Place sausage slices on the second sheet pan.
  8. Roast vegetables for 15 minutes. Remove pan and stir/flip vegetables to ensure even browning.
  9. Add the sausage pan to the oven. Roast for another 10-15 minutes, or until sausage is cooked through and browned, and vegetables are tender-crisp.
  10. Remove from oven, taste, and adjust salt if needed. Serve immediately.

Notes

Ensure vegetables are dry before roasting to prevent steaming. Do not overcrowd the pan; use two pans if necessary for even browning. Check sausage label for sugar or fillers to ensure Whole30 compliance. Leftovers store well in the fridge for up to 4 days but do not freeze well due to vegetable texture changes.
